Roasted vegetables make a side dish that is hard to beat – they are easy, tasty, and healthy! You can enjoy your roasted vegetables for supper and eat the leftovers for lunch tomorrow. They are a great addition to any meal! Cherry Sandeen from ISU Extension and her daughter Hallie, a 4-H cooking club member, will provide recipes and TASTY SAMPLES of roasted vegetables and share how you can utilize the leftovers by incorporating them into a main dish.
